In the spirit of the return of Game of Thrones, we at Seven Valleys Health Coalition would like to share a special recipe for Healthy Bran Muffins. Read on for more info about the benefits of this delicious recipe.

Wheat and other whole grains are full of nutrients that may lower the risk of heart disease, stroke, and type 2 diabetes. Wheat also supports healthy digestion.

Bran is a whole grain that is packed with nutrients and fiber. Bran also promotes healthy gut bacteria, heart health, and reduces the risk of certain cancers.

Flax seeds are loaded with nutrients  that may help to improve cholesterol, lower blood pressure, improve heart health, and control blood sugar.

Eggs are full of vitamins and nutrients that work to raise good cholesterol and lower the risk of heart disease and stroke. Eggs are also great for eye health!

Almond milk contains staple vitamins such as vitamins E and D, and is a great source of calcium. Almond milk is an excellent milk substitute for our lactose intolerant readers. It is also low in calories and in sugar.

An apple a day keeps the maester away! Apples are an excellent source of nutrients that are great for heart health, can lower the risk of diabetes, lower blood pressure, and are good for your bones. Apples also contain compounds that help to fight asthma!

Food produced locally is more nutritious. This is because food contains the most nutrients around the time it is harvested. The longer food spends traveling, the less nutrition it contains. Less time traveling also means less exposure to harmful chemicals and less production of greenhouse gasses. What a tasteful way to decrease our carbon footprint!

Healthy Bran Muffins

Ingredients

  • 1 ½ cups wheat bran

  • 1 cup buttermilk

  • ⅓ cup vegetable oil

  • 1 egg

  • ⅔ cup brown sugar

  • ½ teaspoon vanilla extract

  • 1 cup all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • ½ cup raisins

Directions

  • Step 1

    Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.

  • Step 2

    Mix together wheat bran and buttermilk; let stand for 10 minutes.

  • Step 3

    Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.

  • Step 4

    Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!
