Mondays can be tough, but we at Seven Valleys Health Coalition are rooting for you! Start the week right by enjoying a tasty and nutritious dish that is great for your body and mind. Carrots  are a great source of fiber, vitamins, potassium, and antioxidants. Carrots may reduce the risk of cancer, lower cholesterol, and are good for eye health

Parsnips contain high levels of minerals, vitamins, and antioxidants that promote growth, oral and heart health and boost the immune and digestive systems. Parsnips can also strengthen bones, lower the risk of diabetes, cancer, respiratory illness, and anemia.

Honey is rich in antioxidants and organic acids that can reduce the risk of heart attacks and stroke, lower blood pressure and triglycerides, and improve cholesterol. Honey is a better sweetener than sugar for diabetics and can also promote eye health.

Beets are filled with vitamins, minerals, and plant compounds that are essential to a healthy diet. Beets are low in calories, help to maintain a healthy blood pressure, and can improve digestive health.  They may also improve brain health and help reduce the risk of cancer.

Olive oil is rich in healthy fats and antioxidants which may reduce the risk of chronic diseases, and lower the risk of heart disease. The anti-inflammatory properties lessen the risk of dementia, arthritis and obesity. Olive oil might also lower the risk of stroke and type 2 diabetes. Additionally, olive oil has antibacterial properties that can kill harmful bacteria that lead to stomach ulcers and cancer.


Food produced locally is more nutritious. This is because food contains the most nutrients around the time it is harvested. The longer food spends traveling, the less nutrition it contains. Less time traveling also means less exposure to harmful chemicals and less production of greenhouse gasses. What a tasteful way to decrease our carbon footprint!

Honey-Glazed Roasted Root Vegetables

Ingredients

  • 1 1/4 pounds parsnips, peeled and sliced 1/2 inch thick

  • 1 1/4 pounds carrots, peeled and sliced 1/2 inch thick

  • One 1 1/4 pound celery root—peeled, quartered and sliced 1/2 inch thick

  • 1 1/4 pounds golden beets, peeled and sliced 1/2 inch thick

  • 1/2 cup extra-virgin olive oil

  • 1/2 cup honey

  • 6 thyme sprigs

  • Salt and freshly ground pepper

  • 2 tablespoons sherry vinegar

How to Make It

Preheat the oven to 425°. In a large bowl, toss the root vegetables with the oil, honey and thyme and season with salt and pepper. Divide between 2 large, sturdy rimmed baking sheets. Cover with foil and roast for 40 minutes, shifting the pans once, until the vegetables are tender. Remove the foil and roast for 10 minutes longer, until glazed. Return them to the bowl and stir in the vinegar then season with salt and pepper. Serve right away.
