#MondayMeals: Lettuce Taco'bout Healthy Eating

Hi, I’m Abigail Williams! I’m an eighth grader at Homer Jr. High School and wrote this at my mother’s work for “Bring Your Child to Work Day”. This is a recipe called ‘Turkey Taco Lettuce Wraps’! Below is health and nutrition information about some of the ingredients needed to make this recipe. Enjoy!

Turkey: High in protein and low in fat. Turkey is a good source of lean meat, vitamins and minerals. Turkey helps keep healthy levels of serotonin in your body and keeps insulin levels stable.

Lettuce: Has many vitamins, calcium, and potassium. Low in calories (1 calorie per leaf), sugar, and fat. Iceberg lettuce has a higher water content than other lettuces. It also prevents heart disease and inflammation.

Onions: Many vitamins, minerals, fiber, and carbohydrates consisting of simple sugars. Onions are also full of plant compounds and antioxides. Onions help reduce the risk of cancer, lowers blood sugar, and improves bone health.

Tomatoes: Full of vitamins, potassium, and fiber. Tomatoes are also made up of 95% water! Tomatoes are low in calories, sugar, carbohydrates (carbs), and fat. Tomatoes help prevent heart attacks, strokes, heart disease, cancer, blood clots and helps with skin health. Tomatoes also help build a protective layer over your blood vessels.

Bell peppers: Full of lots of vitamins and minerals. They help prevent the common cold, anemia, and prostate and lung cancer. Bell peppers also help with your vision and to have a faster metabolism.



Food produced locally is more nutritious. This is because food contains the most nutrients around the time it is harvested. The longer food spends traveling, the less nutrition it contains. Less time traveling also means less exposure to harmful chemicals and less production of greenhouse gasses. What a tasteful way to decrease our carbon footprint!

Turkey Taco Lettuce Wraps

Ingredients

  • Ground turkey

  • Onion and garlic

  • Spices, cumin, paprika  and chili powder

  • Tomato sauce

  • Chicken broth

  • Romaine lettuce

  • Desired toppings

How to Make

  1. Heat olive oil in a non-stick skillet over medium-high heat.

  2. Add onion and saute 2 minutes. Add turkey and garlic, season with salt and pepper, and cook, tossing and breaking up turkey occasionally, until cooked through, about 5 minutes.

  3. Add chili powder, cumin, paprika, tomato sauce and chicken broth. Reduce to a simmer and cook about 5 minutes until sauce has reduced.

  4. Serve mixture over lettuce leaves with desired toppings.
