Have a peachy 4th of July! We at Seven Valleys Health Coalition are choosing to celebrate by eating fresh local foods. Celebrate with us by trying out this recipe for Peach and Celery Salad! Peaches are packed with vitamins, minerals, and beneficial plant compounds that may improve digestion, heart, and skin health. Peaches may also boost the immune system

Arugula is full of vital vitamins and nutrients that encourage healthy cell and bone growth, eye health, and proper kidney, heart, lung, and immune system function. Arugula also helps to lower blood pressure.

Olive oil contains healthy fats and antioxidants which may reduce the risk of chronic diseases, fight inflammation, and lower the risk of heart disease. Olive oil might also lower the risk of stroke and type 2 diabetes.

Lemons are rich in vitamins, minerals, and nutritious plant compounds that support heart health, digestive health, and help to prevent kidney stones. Lemons may also help prevent anemia.

Pistachios are packed full vitamins and minerals that reduce the risk of heart disease, lower blood sugar, improve cholesterol, and promote healthy gut bacteria. Pistachios may also help manage type 2 diabetes.

Food produced locally is more nutritious. This is because food contains the most nutrients around the time it is harvested. The longer food spends traveling, the less nutrition it contains. Less time traveling also means less exposure to harmful chemicals and less production of greenhouse gasses. What a tasteful way to decrease our carbon footprint!

Peach and Celery Salad

Ingredients

  • 3 cups thinly diagonally sliced celery

  • 3 cups sliced ripe peaches

  • 3 cups baby arugula

  • 1/4 cup thinly sliced fresh basil

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon fresh lemon juice

  • 3/8 teaspoon kosher salt

  • 1/4 teaspoon black pepper

  • 1/4 cup chopped roasted salted pistachio

How to Make It

Place celery, peaches, baby arugula, fresh basil, extra-virgin olive oil, fresh lemon juice, kosher salt, and black pepper in a large bowl. Toss gently to coat. Sprinkle chopped roasted salted pistachios over salad.
