We know how important veggies like these are to the health of our bodies and minds. Brussels sprouts are rich in nutrients and antioxidants that support digestive health, are good for blood clotting and bone metabolism, and may help maintain healthy blood sugar levels. They may also help to reduce the risk of diabetes and heart disease, and may help to prevent certain types of cancer.
Olive oil is rich in healthy fats and antioxidants which may reduce the risk of chronic diseases and lower the risk of heart disease. The anti-inflammatory properties lessen the risk of dementia, arthritis, and obesity. Olive oil might also lower the risk of stroke and type 2 diabetes. Additionally, olive oil has antibacterial properties that can kill harmful bacteria that lead to stomach ulcers and cancer.
Honey is rich in antioxidants and organic acids. These properties may lower the risk of heart attacks and stroke and can promote eye health. Honey is a better sweetener than sugar for diabetics and may help to lower blood pressure, triglycerides, and improve cholesterol.

Food produced locally is more nutritious. This is because food contains the most nutrients around the time it is harvested. The longer food spends traveling, the less nutrition it contains. Honey Balsamic Roasted Brussels Sprouts
Ingredients
1.5 lbs fresh or frozen Brussels sprouts
3 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons balsamic vinegar
2 teaspoons honey
Instructions
Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper.
Trim ends from each Brussels sprout. If needed, peel off the wilted outer leaves and discard. Cut each in half.
Arrange Brussels sprouts on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly. Spread vegetables into a single layer, making sure there is no overlap.
Roast Brussels sprouts for 18 to 20 minutes or until you see browned caramelized edges. Remove from oven.
In a small mixing bowl, whisk together honey and balsamic vinegar. Pour mixture over roasted veggies. Toss to coat evenly. Serve right away.
