Farm to table…farm to bistro…farm to fork…what is it?!

Farm-to-xx — it could be farm-to-table, farm-to-fork, farm-to-school, farm-to-bistro, etc. — is a movement that promotes serving local food items, preferably through direct acquisition from the producer, at restaurants, cafeterias, and other public eating spaces. This movement connects with rising concerns about local economics, food safety, levels of freshness and nutrition, and seasonality of the items involved in what lands on our plates.

Choosing to source locally and seasonally can provide a lot of positives to both the eater (you!), the producer, and the community they both live in. Some of the pros of sourcing food in this way are:

  • Establishing and nurturing relationships between eaters and local farmers (hello, neighbor!)

  • Supporting and increasing the amount of dollars in the local economy (what is made local, stays local!)

  • Reducing fuel use regionally and nationally (goodbye dirty air!)

  • Higher nutritional content due to food arriving sooner and fresher (your body will thank you!)

  • Increasing food diversity as you rely on products that are in season to make your meals (did you know that your good gut bacteria LOVES diversity in relation to what you eat?!)

  • Upholding of ethical standards that promote wellness of person and land (often locally raised items are GMO, grass-fed or free-range, organically-handled, etc.)
